Large Shirakaga Plums Grown at the Foot of Mount Haruna
The ingredients are carefully selected from Shirakaga ume plums grown in the foothills of Mount Haruna, Gunma, with a particular focus on large, high-quality fruit. To preserve the fresh character of the plums, only fruit harvested within three days is used for production.
Taking advantage of the natural bounty of the Haruna foothills, a region known for its ume production, the liqueur is crafted to preserve the original aroma and flavor of the plums.
A Two-Stage Preparation Method That Draws Out the Plum’s Flavor
The production process uses a two-stage preparation method designed to facilitate the extraction of flavor and components from the plums. The plum character is carefully extracted before the liqueur is aged, creating a rich and substantial flavor.
In addition, the final product contains 50% or more umeshu aged for at least 18 months, contributing to its deep and concentrated character.
A Traditional Umeshu Made with Only Plums, Alcohol, and Sugar
The ingredients are limited to plums, alcohol, and sugars. No additional additives are used, allowing the natural character of the plums to remain at the center of the flavor.
By keeping the recipe simple, the liqueur highlights the elegant aroma, rich sweetness, and deep umami-like depth of Shirakaga plums.
A Full-Bodied Flavor Created Through Long Aging
Using umeshu aged for at least 18 months creates not only the fresh, fruity character of ume but also a deeper, more layered flavor resulting from the aging process.
With each sip, the aroma of ume spreads across the palate, followed by rich sweetness and a deep, full-bodied finish. It is a luxurious plum liqueur designed to be savored slowly.
